Quick-prep Garlic Teriyaki Beef in your Instant Pot

I’ve found the perfect meal for my family. And when I say “for my family,” I mean everyone but me.

Everyone in my family eats a little differently.

My husband, God bless him, will eat anything I make. But he does desire meat at every meal.

Once, early in our marriage, I prepared a lovely eggplant parmesan dish. After eating it he jokingly asked what was for the main course. If he hasn’t consumed something that originally had a face, then the meal feels incomplete.

My kids have different preferences as well. One is carb-o-licious while the other might be the only kid in America who has never liked macaroni and cheese. And don’t even think about mixing dinner components into a casserole. Anywho…

One item they can all agree on is red meat. (And any meat on a bone, but that’s a different post for a different day.) Of course they love steak tenderloin, but who can afford that beyond special occasions?

Personally, I’m not a huge red meat fan. I’ll eat it, but rarely do I choose or crave it (except beef fajitas for some strange reason. Add some lime and garlic to those babies and mmm….)

Quick prep & easy cleanup – perfect for busy nights

This is a great meal for me to prepare on nights I’m not home for dinner. I know my kids will actually eat this without dumping most of it down the disposal before I can stop them.

Thursday nights are a perfect night for me to prepare a beef-based meal that cooks with the press of a button. My evening starts with taxiing children around, then finishes with attending my local Toastmasters club. (If you’re unfamiliar with Toastmasters, no, we are not toasting each other with spirits for an hour. It’s a non-profit educational organization that teaches public speaking and leadership skills through a worldwide network of clubs.)

The first time I made Garlic Teriyaki Beef, I arrived home to my husband proclaiming dinner was an “A+.” (Don’t ask me why we grade things like this.) He loved the flavor and especially appreciated the thawed and heated frozen rice served beside it … cleanup bonus!

This meal is one where the difference between the Instant Pot and slow cooker shines. Any meat prepared in the slow cooker becomes shredded. With this Instant Pot recipe, the meat remains in cubes.

Garlic Teriyaki Beef is ridiculously simple, almost as much as my Chicken Verde recipe.

If you’re gluten sensitive or gluten-free, use the aminos or make sure your soy sauce is gluten-free.

Garlic Teriyaki Beef

Adapted from Instant Pot Pressure Cookbook by Jessica Taylor (which, sadly, I can’t find on Amazon anymore)

Ingredients

2 pounds top sirloin steak

2 cloves garlic, minced

green onions, optional

For the teriyaki sauce

2 Tbs fish sauce

¼ cup maple syrup

¼ cup liquid aminos (I like Bragg’s) OR soy sauce

1 Tbs raw honey

1 ½ tsp ground ginger

Directions:

Trim steak and slice the steak into 1-inch cubes.

Put the steak into the instant pot, mix with garlic.

Mix the teriyaki sauce ingredients and pour in the steel Instant pot bowl.

Mix to coat meat with sauce.

Close and lock the lid on the Instant Pot.

Press the MANUAL key, set the pressure to HIGH, and set the timer to 40 minutes.

When the timer beeps, quick release the pressure. Unlock and carefully open the lid.

Serve over brown cooked rice.

Top with diced green onions if desired.
